Capitalising on the hotel-residence complex championed by its sister properties (Chateau Les Carrasses and Chateau Capitoul, opening in 2020), St Pierre de Serjac offers both a member’s club like community and the main hub for guests – the Chateau itself.

It is evident, upon entering the grounds, that a great deal of care and effort has gone into giving the hotel a facelift to completely modernise it. We loved the monochrome interior design throughout that gives the hotel both a stylish and timeless quality.

This, of course, is contrasted with the wonderful original features preserved at the Chateau – the original stone tiles, beautiful marble fireplaces and the traditional winding staircase. Architecturally, we loved the fantastical turrets (that have been converted into residences) and generally the desire to stay true to, and preserve, the original form of the Chateau and its outhouses.

For guests staying at the hotel, you will stay in one of the bedrooms in the Chateau.  The rooms offer expansive views over the countryside and unrivalled views of the infinity pool which is practically at your doorstep.  The bedrooms are large and replete with all the amenities of a luxury hotel – a large bathroom (with the option of a bathing tub in the room), a large wardrobe space and ultra comfortable beds.

Gastronomy

A must visit is the restaurant at St. Pierre de Serjac. Local chef Ludovic Laurenty is the master chef behind the exciting menus at Serjac, who, after several years in Paris and with several Michelin star ratings to his name, returned to the Languedoc.

All of the food is locally sourced – some of it coming from the estate itself – and all of it is exceptional.

Our meal consisted of a Cauliflower veloute with pan fried foie gras and the roasted veal, braised chicory, fondant carrots, thyme jus, all of this topped off with a bottle of Chateau Capitol 2015. The cauliflower veloute was a delicate mix of creamy vegetable and foie gras creating a smooth dish that was just so in terms of balance, flavours and textures. The roasted veal was outstanding; a tender cut of veal with a fine and moreish jus, topped off with a strong chicory flavour, once again perfected the art of balancing flavours. Accompanied with the Chateau Capitol 2015 with a fruit nose and nutty palette, this meal is totally irresistible. So much so that we repeated this the next day.

The wine caveau is also worth a visit for a degustation of the hotel’s award winning wines or for larger events.

Location

A final word on the location. The Languedoc is a region that hugs the West coast of the South of France that is known, amongst other things, for its outstanding wines (it is actually the largest producer of Rose in France). It also features the beautiful Canal du Midi that interlocks many of the villages and towns and boasts diverse cultural activities. In fact, Montpellier was recently dubbed Europe’s next culture capital. It is also an area of outstanding (natural) beauty. For an alternative to the tried and tested Cote d’Azur, this should be your next stop.
